Elevating the Essence of Traditional Japanese Sweets to a Modern Style
The concept is making sweets that fit modern life while evolving the consciousness of traditional Japanese "Beauty." The attitude of cherishing the blessings of nature and the transition of the four seasons is also utilized in their sweet making. The modern stick-type monaka is a handmade type where you combine the bean paste and the slender, delicate crust when eating.
