SUNTORY

Water nurtured by the mountains of the Southern Alps, the air enveloping the forest, and the slow flow of time. The "Forest Distillery" at the foot of the Southern Alps is a rare place where great nature merges with human wisdom and technology. Be sure to visit and fully enjoy this splendor with your five senses. While leaving it to mature in the blessed environment of the Hakushu forest, they combine the individuality of the raw spirit and the casks, and determine the peak of maturation with human eyes. Here, they create an unprecedented variety of raw spirits. The cask-aged spirit is elevated into a product by a blender. Enjoying the single malt whisky "Hakushu"—appealing for its light and refreshing taste made with crisp, mineral-containing soft water—amidst the rich nature of this land is exceptional.

There Is No Moment More Moving Than Finding "Human Wisdom" in Nature

For most of human history, people have lived with nature. That is why we feel a special emotion when we sense "human wisdom" in nature. It is likely because we instinctively remember the process of surviving, coexisting, and obtaining happiness in the global environment. Among these, alcohol is a human masterpiece crafted by applying wisdom to natural materials. For whisky distilleries, this is their lifeline; just as music and painting could not exist without nature, single malt whisky would not exist without it. Therefore, a "forest distillery"—rare in the world—evokes a truly pleasant emotion that cannot be obtained from "untouched nature" alone. The Hakushu Distillery, nestled in a vast forest of about 820,000 square meters at an altitude of about 700 meters in Hokuto City, Yamanashi Prefecture, is a miraculously natural distillery. Rain and snow falling on the Southern Alps, a pride of Japan, take about 20 years to filter through natural layers, resulting in soft water that brings mellowness and clarity to Hakushu. Furthermore, the raw spirit—born with flavor from the deep forest and transparency from the clear air—never loses its purity even when aged. Tasting Hakushu as if appreciating this dramatic collaboration between nature and humans is a pleasure in itself. We want to praise this overwhelming craftsmanship, including the murmuring of clear streams and the chirping of birds.
